Grilled Smashed New Potatoes

Ingredients

  • 24 small red new potatoes (about 1 1/2 lbs.)
  • 3 tbsp olive oil, divided
  • 1/3 cup chopped fresh parsley
  • 1 tbsp minced fresh garlic
  • 1 tsp lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice

Directions

  1. In a large saucepan, bring potatoes and water to cover by 2 inches to a boil over medium-high heat. Cook until potatoes can easily be pierce with a knife, 8 to 10 minutes. Drain, and let cool slightly. Using a spatula, gently press potatoes until they are just smashed but hold their shape.

  2. Spray grill rack with cooking spray. Preheat grill to medium-high heat.

  3. Brush 1 tbsp oil onto potatoes. Grill until grill marks form on bottom, about 2 minutes. Turn potatoes; grill for 2 minutes. Transfer to a serving platter. Sprinkle with parsley, garlic, lemon zest, salt and pepper. Drizzle with lemon juice and remaining 2 tbsp oil.
