Chicken Feta Salad with Cantaloupe and Spinach

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • Marinade:
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup mint, shredded
  • cracked black pepper
  • 1/2 cantaloupe, cut into bite sized pieces
  • 8 cherry tomatoes, quartered
  • 1/4 cup feta cheese, cubed
  • 4 cups baby spinach
  • green onions, chopped
  • dressing:
  • 1/4 cup olive oil
  • 1/8 cup lemon juice
  • 1/8 cup shredded mint

Directions

  1. Combine 1/3 cup olive oil, 1/4 cup lemon juice, 1/4 cup shredded mint and pepper. Pour over chicken breasts and marinate for at least an hour.

  2. Remove chicken breasts from marinate and grill or bake until done. Cut into bite sized pieces.

  3. Assemble the chicken and cheese on a platter with baby spinach. Top with cantaloupe, tomatoes, green onions and feta. Garnish with some extra mint and dressing, maybe a little extra black pepper.
