Orange Nut Bread

Cook time: 60 minutes

Ingredients

  • 1 medium-sized orange
  • 1 cup raisins or dates
  • 2 tbsp. melting shortening
  • 1 tsp. vanilla
  • 1 beaten egg
  • 2 cups flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1 cup sugar
  • 1/2 cup choped nut meats

Directions

  1. Pour juice from orange in standard 8-ounce measuring cup; add boiling water to fill cup.

  2. Remove most of white membrane from orange rind; force thru food chopper with raisins using coarse blade; add diluted orange juice.

  3. Cream shortening, vanilla extract, and egg.

  4. Add flour sifted with salt, baking powder, soda, and sugar; beat well.

  5. Sir in nut meats.

  6. Bake in waxed-paper-lined 5×9-inch pan in moderate oven (350) about 1 hour.
