Microwave Rhubarb Crumble

Ingredients

  • 1/4 c. flour
  • 3/4 c. sugar
  • 1/2 c. brown sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tbsp. lemon juice
  • 1/2 c. water
  • 4 c. rhubarb
  • topping - 1/2 c. butter
  • 1 c. flour
  • 1/2 c. oats
  • 1/2 c. brown sugar
  • 1/4 tsp. salt

Directions

  1. Combine flour, sugar, brown sugar, cinnamon, nutmeg, lemon juice, water, and rhubarb. Put into a 9 × 9 dish.
  2. Cover with plastic and microwave 3 minutes.
  3. Create the topping by combining butter, flour, oats, brown sugar, and salt. Spread on top of the rhubarb mix.
  4. Bake uncovered in the microwave for 10 minutes.
