Ingredients
- 3 c. Brazil nuts (1 lb. unshelled)
- 1 lb. pitted dates (fresh chopped)
- 1 c. (one jar) drained Maraschino cherries
- 1 c. shifted flour
- 1 c. sugar
- 1 tsp. baking powder
- 2/3 tsp. salt
- 4 eggs
- 1 1/2 tsp. vanilla
Directions
- Put nuts, dates, and cherries into large bowl.
- Sift flour, sugar, baking soda, and salt over nuts and dates. Mix by hand until foamy.
- Add vanilla. Stir until well mixed.
- Bake in greased and waxed pan.
- Bake at 300 for 1 hour and 45 minutes.
- Let cool before slicing.
- Shelling Brazil nuts: Cover with cold water. Bring to a boil for 3 minutes. Drain and cover with cold water. Drain real good and crack. Put them in even if that are not whole.
