Ingredients
- 2 T oil
- 6 slices of diced bacon
- 1 lb medium shrimp peeled & deveined
- 1/2 C sliced mushrooms
- 2 cloves crushed garlic
- 3 medium scallions--1/2 inch diagonal slices
- 1 T fresh lemon juice
- 1/2 t red pepper sauce
- 1/2 t salt
- 1/2 t pepper
- cheese grits--recipe below
Directions

Heat oil in 12" skillet, add bacon, cook until crisp

Flour shrimp in bag adding about 5 at a time

Increase heat to medium, add shrimp & cook about 2 minutes stirring frequently

Add mushrooms and garlic—cook about 2 min

Stir in scallions, lemon juice, pepper sauce, salt and pepper

Cook about 1 min until scallions are heated

Cheese grits:

Cook 1 C quick grits using 4 C water

Remove from heat
-
Stir in 3/4 C grated cheddar, 1/4 C grated parmesan, 1/4 C butter, 1/2 t salt, 1/4 t hot red pepper sauce, 1/3 t white pepper and pinch of cayenne pepper

Sprinkle with 1/4 C cheddar to serve
