Cornbread with Niblets

Ingredients

  • 1 c. cornmeal
  • 1 c. whole wheat flour
  • 1/4 sugar
  • 1/2 tsp. baking soda
  • 1 egg, lightly beaten
  • 1 1/2 c. buttermilk
  • 1 c. whole kernel corn, drained
  • 1/3 c. oil

Directions

  1. In a large bowl, blend dry ingredients together.
  2. In a medium-sized bowl, mix egg, buttermilk, corn, and oil. Stir the buttermilk mixture into corn meal mixture and blend thoroughly.
  3. Pour into greased 8-inch square baking dish and bake at 425 for 20-25 minutes, or until tooth-pick inserted in center comes out clean.
