Ingredients
- 1 c. cornmeal
- 1 c. whole wheat flour
- 1/4 sugar
- 1/2 tsp. baking soda
- 1 egg, lightly beaten
- 1 1/2 c. buttermilk
- 1 c. whole kernel corn, drained
- 1/3 c. oil
Directions
- In a large bowl, blend dry ingredients together.
- In a medium-sized bowl, mix egg, buttermilk, corn, and oil. Stir the buttermilk mixture into corn meal mixture and blend thoroughly.
- Pour into greased 8-inch square baking dish and bake at 425 for 20-25 minutes, or until tooth-pick inserted in center comes out clean.
