Potato and Cauliflower Curry

Easy and very tasty curry

Ingredients
- 2 Tablespoons of Olive oil or Coconut Oil
- 1 brown onion cut into wedges
- 700g desiree potatoes cut into 2cm pieces
- 2cm piece fresh ginger grated
- 2 garlic cloves sliced
- 1/2 (400g) cauliflower florets
- 1 can (400g) diced tomatoes
- 1/2 cup greek yogurt
- Coriander to serve
- SPICE MIX
- 1/2 teaspoon chilli powder
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam marsala
- 1/2 teaspoon ground turmeric
- 1 teaspoon salt
Directions

Make spice mix, combine ingredients in bowl and mix

Heat oil in a large frying pan over medium heat. Add onion and potatoes. Cook, stirring occasionally, for 5 to 7 minutes or until light golden. Add ginger, garlic and spice mix. Cook, stirring, for 1 minute.

Add cauliflower, tomatoes and 1/2 cup cold water (or veggie stock) to pan. Stir to combine. Cover and cook for 40minutes or until potatoes and cauliflower are tender.

You can mix yogurt into curry or spoon on top when serving with coriander.

Note: You can add cauliflower 15minutes into cooking time for a more firm texture.
