Best Ever Sweet & Sour Sauce

Ingredients

  • 1 20-oz can pineapple chunks
  • 1/2 c. brown sugar, firmly packed
  • 1/4 c. cornstarch
  • 1/2 tsp. ground ginger
  • 1/2 c. cider vinegar
  • 1/4 c. soy sauce
  • 1 1/4 c. green pepper strips
  • 1 c. sliced onions
  • 1 c. sliced carrots
  • 2 c. cubed turkey, chicken, or pork
  • Hot fluffy rice

Directions

  1. Drain pineapple, saving juice, and adding water to make 3 cups.
  2. Combine brown sugar, cornstarch, and ginger. Stir in pineapple juice, vinegar, and soy sauce. Bring mixture to boil. Stir constantly.
  3. Add green pepper, onions, carrots, turkey, and pineapple chunks. Cover and simmer for 10 minutes or until veggies are tender, crisp.
  4. Serve over rice.
