Ingredients
- 1 1/2 c. old-fashioned rolled oats
- 1 c. rolled rye flakes (optional)
- 1 c. rolled wheat flakes (optional)
- 1/2 c. toasted wheat germ
- 1/2 c. soy flour
- 1/2 c. chopped walnuts, toasted
- 1/2 c. chopped almonds, toasted
- 1/4 c. sesame seeds, toasted
- 1/4 c. raw & unsalted sunflower seeds, toasted
- 1/2 c. unsweetened applesauce
- 1/4 c. plus 2 Tbsp honey
- 1/4 c. plus 2 Tbsp maple syrup
- 1/4 c. canola or corn oil
- 3/4 c. dried fruit (raisins, currents, apricots, dates), chopped
Directions
-
Preheat the over to 350 deg.
-
Dry Ingredients (up to applesauce) – Combine the dry ingredients thoroughly in a large bowl and make a well in the center.
-
Wet Ingredients – Whisk together the wet ingredients in a medium bowl. Pour into the dry ingredients and mix until evenly moistened.
-
Spread on a large baking sheet and bake, stirring every 10 minutes, until the granola begins to turn golden brown, about 30 minutes.
-
Remove from the oven and immediately pour the granola into a large bowl. Add the dried fruit and stir well. Let cool completely and store in an airtight container at room temperature.
-
Note: You can use all honey or all maple syrup instead of a combination. If you can’t find rye or wheat flakes, you can substitute more old-fashioned rolled oats. Eric and I didn’t toast our nuts and it still tasted fine. You could probably substitute regular or whole wheat flour for the soy flour if you can’t find soy flour.
