Ingredients
- 1/2 c. quinoa, rinsed well and drained
- 1/3 c. millet, rinsed well and drained
- 3/4 tsp salt
- 1/4 c. farina (Cream of Wheat)

The night before you plan to serve the cereal, bring 4 c. water to a boil in a medium saucepan. Add the quinoa and millet, return to a rolling boil, cover, and remove from the heat. Let stand covered at room temperature overnight.

(Alternatively, to cook the cereal the same day, bring 4 c. water to a boil in a medium saucepan and add the quinoa, millet, farina, and salt. Return to a boil, reduce the heat to very low, cover and simmer for about 20 minutes, stirring occasionally, until all the water has been absorbed. Add 1 c. boiling water and continue to simmer, stirring occasionally, for 10-15 minutes, until cereal reaches desired consistency.)

In the morning, whisk 1 c. boiling water and the salt into the cereal and bring to a boil. Reduce the heat to very low and whisk in the farina, stirring constantly for 1 minute. Cover and simmer, stirring occasionally, until thickened, 2 to 10 minutes more. Serve hot with your favorite condiments.
