Ingredients
- 2 cups mashed, cooked sweet potatoes
- 6 tablespoons unsalted butter, softened
- 2 eggs, beaten
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup evaporated milk
- 1 9-inch deep dish pie shell, partially baked
- 3 tablespoons unsalted butter, melted
- 1/2 cup tightly packed light brown sugar
- 1/3 cup all purpose flour
- 2/3 cup finely chopped pecans

Preheat oven to 350 degrees F.

In a bowl mash together the sweet potatoes and the softened butter. Add the eggs, sugar, vanilla, cinnamon, nutmeg and evaporated milk and stir well until smooth. Pour into pie shell and smooth the top.

In a small bowl combine the melted butter, brown sugar, flour and pecans. Stir to blend; the mixture will be crumbly. Sprinkle topping over the pie.

Bake the pie on a cookie sheet for 25 to 35 minutes.
