Ingredients
- 1/2 cup vegetable oil, plus more for frying
- 2 cups cornstarch
- 1 1/4 cups all-purpose flour
- 2 tsp paprika
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- Kosher salt
- 1/2 cup dry white wine
- 1/2 cup beef
- 2 jumbo sweet or yellow onions

ll a big pot with 4 inches of vegetable oil and heat the oil over medium-high heat until a small strand of the onion ring batter browns and crisps pretty fast when dropped into the oil. Heat oil to 350.

While the oil is heating, in a large bowl, whisk together the cornstarch, flour, paprika, black pepper, garlic powder, cayenne and 1/2 tbsp salt. Whisk in 1 cup water, the 1/2 cup vegetable oil, wine, and beer until smooth and thick.

Slice the onions crosswise into 3/4-inch-thick rounds, then separate the rounds into rings.

When the oil is ready, dip the rings into the batter with tongs, a few at a time, pull them out, let a bit of the excess batter drip off, then fry them until golden brown and crispy, about 3 minutes (flip once halfway). Drain on paper towels and season with salt.
