Pesto Pasta Salad

I doubled all the ingredients for recipe – serves 12

Serves 12 people

Ingredients

  • 24 oz corkscrew pasta
  • 2 cup refrigerated basil pesto
  • 3 cups cherry tomatoes - halved
  • 3 cups fresh mozzarella balls halved
  • 1 cup kalamata olives pitted and halved
  • 1/2 cup toasted pine nuts plus more for garnish
  • 1/2 cup diced red onion
  • 1/2 cup chopped parsley plus more for garnish

Directions

  1. Cook the pasta in salted water according to package

  2. Drain pasta in cold water

  3. Place the pasta in a large bowl along with tomatoes, mozzarella balls, olives, pine nuts, red onion and parsley

  4. Pour the pesto over the top and toss

  5. Serve topped with additional pine nuts and parsley for garnish.

  6. Pasta salad can be prepared up to 6 hours in advance and stored in the refrig.until ready to serve.
