Ingredients
- 1 1/2 c. plus 3 tbsp. unsifted flour
- 1/2 c. confectioners' sugar
- 3/4 c. cold margarine or butter
- 2 eggs
- 1 14-oz. can sweetened condensed milk (NOT evaporated milk)
- 1/2 c. bottled lemon juice
- Yellow food coloring, optional
- Additional confectioners' sugar
Directions

Preheat oven to 350.
- Combine 1 1/2 c. flour and 1/2 c. sugar.
- Cut in margarine until crumbly.
- Press firmly on bottom of 13-by-9-inch baking pan. Bake 15 minutes.
- In small mixer bowl, beat eggs with sweetened condensed milk and 3 tbsp. flour.
- Stir in bottled lemon juice and food coloring if desired.
- Spread evenly over prepared crust. Bake 20 minutes or until set. Cool. Chill.
- Top with additional confections’ sugar. Store covered in refrigerator.
- Makes 24-36 bars.
