Cod and Coconut Stew

Ingredients
- 2 tablespoons olive oil, divided, or as needed
- 2 pounds fresh cod, sliced into fillets
- salt and ground black pepper to taste
- 1 large sweet onion, sliced
- 1 large red bell pepper, sliced
- 4 large cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, drained
- 1 (14 ounce) can coconut milk
- 1 green onion, chopped (green part only)
- 1 dash Sriracha hot sauce, or more to taste
- Juice of one lemon
- 1 tbsp smoked paprika

Season fish with salt and pepper.

Heat about 1 tablespoon olive oil in a skillet over medium-high heat; saute onion, red bell pepper, and garlic until tender, about 2 minutes. Stir diced tomatoes into onion mixture. Arrange cod on top of tomato mixture and pour coconut milk over fillets. Sprinkle green onion over cod fillets. Adjust seasoning of salt, pepper, paprika, lemon.

Cover skillet, turn heat to low, and cook until fish flakes easily with a fork and stew is thickened, about 1 hour.

Served over steamed rice if desired.
