Ingredients
- 24 oz. bag baby red potatoes, halved or quartered
- 1/2 cup finely grated Parmesan
- 4 garlic cloves, minced
- 2 tbsp chopped fresh thyme
- 2 tbsp unsalted butter, melted
- 4 tsp kosher salt, divided
- 2 1/4 tsp black pepper, divided
- 3 New York strip steaks
- 1 lb. French green beans, trimmed
- 1 tbsp olive oil
- Garnish: chopped fresh thyme
Directions
-
Preheat oven to 425. Line a large rimmed baking sheet with parchment paper.
-
In a large bowl, toss together potatoes, cheese, garlic, thyme, melted butter, 2 tsp salt and 1/2 tsp pepper until combined. Place in an even layer on prepared pan.
-
Bake for 30 minutes, stirring halfway through baking. Push potatoes to one side of pan. Increase oven temp to broil.
-
Sprinkle steaks with 1 1/2 tsp salt and 1 1/2 tsp pepper; add steaks to pan.
-
In a large bowl, stir together green beans, oil, remaining 1/2 tsp salt and remaining 1/4 tsp pepper; add green beans to pan.
-
Bake for 10 minutes. Turn steaks, and stir potatoes; bake until cooked to your liking, 10 to 25 minutes more, covering potatoes with foil halfway through baking to prevent excess browning. Garnish with thyme.
