Ingredients
- 1 1/2 lbs. chicken breasts
- 3 tsp chili powder
- 1 cup chicken broth
- 1/4 tsp dried oregano
- 1 tsp each of ground cumin, pepper and seasoned salt
- 1/4 tsp red pepper flakes, crushed
- 9 cups torn romaine
- 1/2 tsp each of ground chipotle pepper, white pepper and paprika
- Toppings:
- Sliced avocado
- Chopped tomato
- Shredded cheddar
- Ranch dressing
- Sliced green onions
Directions

Mix the entire seasonings together in a medium sized bowl. Rub the mixture over the chicken, ensuring it’s completely coated. Place in a slow cooker. Add broth. Cover and cook on LOW until the meat is tender, 3 to 4 hours.

Remove the chicken, let cool slightly. Shred with two forks. Serve over romaine, top with your favorite toppings and enjoy.
