Ingredients
- Corn oil, for deep-frying
- 1 large egg
- Pinch of salt
- 3/4 cup water
- 3/8 cup all-purpose flour
- 2 tsp ground cinnamon
- 1/4 cup superfine sugar
- 4 apples, peeled and cored

ur the corn oil into a deep fryer or large, heavy-bottomed pan and heat to 350-375.

Meanwhile, using an electric mixer, beat the egg and salt together until frothy, then quickly whisk in the water and flour.

Mix the cinnamon and sugar together in a shallow dish and set aside.

Slice the apples into 1/4 inch thick rings. Spear with a fork, 1 slice at a time, and dip in the batter to coat. Add to the hot oil, in batches, and cook for 1 minute on each side, or until golden and puffed up. Remove with a slotted spoon and drain on paper towels. Keep warm while you cook the remaining batches. Transfer to a large serving plate, sprinkle with the cinnamon sugar and serve.
