Ingredients
- 4 red, yellow, orange and/or green bell peppers, cut into 1-inch pieces
- 1 large sweet onion, cut into thin wedges
- 2 cups grape tomatoes
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp Italian seasoning, crushed
- 1/4 tsp salt
- 1/4 tsp black pepper
- 8 oz. baguette-style bread, thinly sliced
- 12 oz. Italian sausage, bias-sliced into thirds
- 1 tbsp snipped fresh oregano

range two racks in middle and upper thirds of oven and preheat to 425. Line 2 10×15-inch baking pans with foil.

Toss together bell peppers, onion and tomatoes in a large bowl with 1 tbsp oil, the vinegar, Italian seasoning, and 1/8 tsp each salt and black pepper. Transfer to one of prepared pans; roast 30 minutes.

Meanwhile, drizzle bread slices with remaining 1 tbsp oil and sprinkle with remaining 1/8 tsp each salt and black pepper. Arrange on the other prepared pan.

Push veggies to 1 side. Add sausage to exposed portion of pan. Roast until veggies are tender and sausage is heated through, 10 to 15 minutes more, adding pan with bread in the last 5 minutes of roasting time. Sprinkle veggies and sausage with oregano and serve with bread.
