Sweedish Meatballs

Ingredients

  • 1 C breadcrumbs
  • 1 C milk
  • 2 lbs ground beef
  • 1 C chopped onion
  • 2 eggs slightly beaten
  • 1 1/2 t salt
  • 1 t nutmeg
  • 1/4 C flour
  • 1/4 t pepper
  • 1/2 C butter
  • 3 beef bullion cubes
  • 3 C hot water
  • 1 1/2 C light cream

Directions

  1. soften bread crumbs in milk

  2. Mix in beef, onion, eggs and seasonings

  3. shape into 1" balls

  4. Saute meatballs until brown

  5. remove meatballs

  6. stir flour into drippings

  7. Dissolve bullion in hot water and mix with rue

  8. add milk and cream

  9. cook while stirring over medium heat a few min

  10. add meatballs

  11. simmer 10-15 minutes until desired consistency

  12. (can add wine & seasoning to sauce-can replace cream with sour cream or blend sour cream with cream or milk)
