Ingredients
- 4 large sweet potatoes
- 1/4 tsp salt
- 1/2 cup pure maple syrup
- 6 tbsp butter
- 1/4 cup packed brown sugar
- 1/4 cup flaked coconut
- 2/3 cup chopped toasted pecans
- 1/4 to 1/2 tsp flaky sea salt

Put whole sweet potatoes in a large saucepan with enough water to cover. Bring to a boil; reduce heat, cover and simmer until just tender, 20 to 25 minutes. Drain and let stand until cool, 10-15 minutes. Peel and cut each potato into 2-inch chunks.

eheat oven to 350. Coat a 9×13-inch baking dish with cooking spray. Arrange sweet potato chunks in dish. Sprinkle with salt.

Stir together syrup, butter, brown sugar, and coconut flakes in a small saucepan. Cook over low heat, stirring constantly, until butter melts and mixture is combined, 3-5 minutes. Pour syrup mixture over sweet potatoes.

Bake until top is starting to brown and glaze is bubbling around edges of dish, about 10 minutes. Sprinkle with pecans and flaky sea salt just before serving.
