Green Chili Stew

Prep time: 20 minutes
Cook time: 90 minutes
Serves 4 people

Ingredients

  • 2 dozen green chili peppers
  • 2 lbs. pork loin
  • 2 tbsp. olive oil
  • 3 cloves garlic
  • 1/2 tsp. cumin
  • 2 large onions
  • 3 cups stewed tomatoes
  • 2 cups water
  • 2 tsp. salt

Directions

  1. Roast chili peppers, peel skin, remove seeds and julienne

  2. Cut pork into bite-size chunks

  3. Saute pork until fully cooked

  4. Add remaining ingredients and simmer for one hour at medium-low heat
