Green Chili Stew

Prep time: 20 minutes
Cook time: 90 minutes
Serves 4 people
Ingredients
- 2 dozen green chili peppers
- 2 lbs. pork loin
- 2 tbsp. olive oil
- 3 cloves garlic
- 1/2 tsp. cumin
- 2 large onions
- 3 cups stewed tomatoes
- 2 cups water
- 2 tsp. salt
Directions

Roast chili peppers, peel skin, remove seeds and julienne

Cut pork into bite-size chunks

Saute pork until fully cooked

Add remaining ingredients and simmer for one hour at medium-low heat
