Beulah Ring Carrot Cake

Makes 3 layers or a 9×13

Ingredients

  • 2C sugar
  • 2t soda
  • 1 and 1/2 cups vegetable oil
  • 3C shredded carrots
  • 2C flour
  • 2and 1/2 t cinnamon
  • 4eggs
  • FROSTING:
  • 8oz. Cream cheese
  • 3and 3/4 cupspowdered sugar
  • 2/3 stick butter
  • 2t vanilla
  • 1C chopped nuts

Directions

  1. Combine all ingredients and mix thoroughly.

  2. Bake at 325 for 35 minutes.

  3. Cool completely before frosting

  4. FROSTING:

  5. Cream butter and cream cheese together. Add sugar and vanilla (and nuts.)
