Crab Cakes

Ingredients
- 1/3 C mayo
- 1 egg
- 2tsp Worcestershire sauce
- 2 tbsp fresh chopped parsley.
- 2 tsp Dijon mustard
- 1/2 tsp hot sauce
- 1 tsp lemon juice
- 1/2 tsp old bay
- 2 tbsp green onion sliced
- 1 lbs lump crab meat
- 1 C saltine crackers(crumbled)
- cooking spray
Directions

Place mayo, egg, Dijon mustard, hot sauce, lemon juice, old bay, and green onion in a bowl and whisk to combine.

Place crab and crackers in same bowl and gently stir to combine.
- Cover and chill in the fridge for least 1 hour.

Preheat oven to 450 degrees

Coat a sheet pan with cookin spray.

Gently form chilled crab mix into equal size patties.

Place patties on sheet pan.

Bake for 8-10 minutes or until golden brown.

Serve immediately with a remoulade sauce and a wedge of lemon.

Can also cook in a large heavy skillet with coating of oil. Cook each side for 3-5 minutes or until golden.
