Basic Fruit Muffin

Ingredients

  • 1.5 cups berries or fresh fruit
  • 1C sugar
  • 8 T butter ( room temperature)
  • 4oz. Cream cheese softened
  • 3eggs, lightly beaten
  • 1t salt
  • 1/2 t vanilla
  • 2and 1/4 cups AP flour
  • 3T milk
  • 2t baking powder

Directions

  1. eheat oven to 350.

  2. On high speed, cream butter and sugar.

  3. Zest orange, 1/2 cream cheese stick (4oz.)

  4. Add eggs, salt and vanilla.

  5. Incorporate.

  6. Add half the flour, mix in.

  7. Add milk, mix in.

  8. Remaining flour and baking powder.

  9. Fold in fruit.

  10. Bake until golden (18-20 minutes.)

  11. The glaze is confectionery sugar and fruit juice.
