Caprese Garlic Bread

Ingredients

  • 1 stick unsalted butter, at room temp
  • 6 garlic cloves, finely chopped
  • 1 14 oz. loaf Italian bread, halved lengthwise
  • 2 large tomatoes, sliced, plus 1 smaller tomato, roughly chopped
  • 1/4 cup olive oil
  • 2 tbsp. white balsamic vinegar
  • 1 tsp kosher salt
  • 16 oz. ball fresh mozzarella, sliced
  • 8 basil leaves, torn

Directions

  1. eheat oven to 400. Mash the butter and garlic together in a medium bowl and slather it on the bread. Place on a baking sheet and toast in the oven until golden brown, 15 to 20 minutes.

  2. Meanwhile, make the tomato vinaigrette: Combine the chopped tomato, olive oil, vinegar, and 1/2 tsp salt in a blender and blend until smooth.

  3. Season the sliced tomatoes with the remaining 1/2 tsp salt. Drizzle the toasted bread with some of the tomato vinaigrette. Top with the mozzarella, sliced tomatoes and basil. Drizzle with more vinaigrette.
