Strawberry-Basil Sorbet

Ingredients

  • 1 1/2 pints fresh strawberries, hulled
  • 6 tbsp granulated sugar
  • 2 tbsp corn syrup
  • 1/2 tsp fresh lemon juice
  • Kosher salt
  • 4 fresh basil leaves

Directions

  1. Place strawberries in a food processor; blend until smooth. Pour through a fine-mesh strainer set over a bowl. Stir in 6 tbsp water, the sugar, corn syrup, and lemon juice, and a pinch of salt. Taste and add more sugar if necessary.

  2. Spin in an ice cream maker as directed. While the sorbet spins, thinly slice basil. When the sorbet is almost done, add the basil leaves and let spin for 1 minute more.

  3. Transfer sorbet to a freezer-safe container. Freeze until solid. Let stand at room temp for a few minutes before scooping.
