Quick Pickles- Basic Brine

Cherry Tomatoes: white wine vinegar+smashed garlic+rosemary sprigs+whole peppercorns
Baby carrots: rice wine vinegar+fresh ginger and turmeric+fresh mint
Ingredients
- 1/2 lb. fresh produce
- 1/2 cup vinegar
- 1/2 cup water
- up to 1 tbsp whole spices
- 2 tsp kosher salt
- 2 tsp sugar
Directions

Arrange produce in a large lidded glass jar. In a small pot, combine vinegar, water, spices, salt, and sugar. Bring to a boil, stirring until sugar and salt are dissolved. Remove from heat. Pour hot mixture over the veggies in the jar, leaving about 1/2 inch of room and twist on the lid. Once the jar cools to room temp, transfer to the fridge and wait at least 48 hours for that pickle punch!
