Peaches with Burrata and Prosciutto

Ingredients

  • 2 peaches, cut into wedges
  • 2 tsp white balsamic vinegar
  • Pinch each of sugar, salt and pepper
  • 1 1/2 cups baby arugula
  • 4 oz. ball torn burrata
  • 2 oz. torn prosciutto
  • Olive oil
  • Flaky salt
  • Pepper
  • Torn mint
  • Chives, chopped

Directions

  1. Toss peaches with vinegar, sugar, salt and pepper. Let stand 10 minutes. Spread arugula on a platter and top with the peaches. Top with burrata and prosciutto. Drizzle with olive oil; sprinkle with flaky salt, pepper, torn mint and chopped chives.
