Ingredients
- 2 peaches, cut into wedges
- 2 tsp white balsamic vinegar
- Pinch each of sugar, salt and pepper
- 1 1/2 cups baby arugula
- 4 oz. ball torn burrata
- 2 oz. torn prosciutto
- Olive oil
- Flaky salt
- Pepper
- Torn mint
- Chives, chopped
Directions

Toss peaches with vinegar, sugar, salt and pepper. Let stand 10 minutes. Spread arugula on a platter and top with the peaches. Top with burrata and prosciutto. Drizzle with olive oil; sprinkle with flaky salt, pepper, torn mint and chopped chives.
