Ingredients
- 3/4 C granulated sugar
- 2 T cornstarch
- 1/8 t salt
- 3/4 C cold water
- 2 egg yolks
- 1 t lemon zest
- juice of 1 - 1 1/2 lemon
- 1 T soft butter
Directions

In small saucepan combine sugar, cornstarch and salt

Gradually add water and whisk well

Whisk in egg yolks and lemon juice

Cook, medium heat, whisking constantly and when bubbles cook one more minute

Whisk in lemon zest and butter

Let cool completely, without stirring
