RADISH & CUCUMBER TZATZIKI

Ingredients

  • 1 bunch radishes, rinsed and trimmed
  • 1 cucumber
  • 11/2 C plain Greek yogurt
  • 2 scallions, sliced
  • 2 garlic cloves, minced
  • 1 tsp finely grated lemon zest
  • 1 TBS lemon juice
  • 2 TBS chopped fresh mint leaves
  • 2 TBS chopped fresh dill
  • 1/4 tsp ground coriander
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Directions

  1. ♦ With the grating attachment on a food processor or the coarse side of a box grater, grate the cucumber.

  2. ♦ Transfer to a colander inside of a bowl, sprinkle with some salt, and press down gently to extract as much liquid as possible.

  3. ♦ Transfer to a clean bowl.

  4. ♦ Grate radishes and add to the bowl.

  5. ♦ Add yogurt, scallions, garlic, lemon zest, lemon juice, mint, dill, coriander, salt and pepper. Stir gently to combine.

  6. ♦ Cover and refrigerate for at least 15 minutes to allow flavors to meld.

  7. ♦ Serve garnished with a few radish slices and more chopped fresh herbs on top.
