RADISH & CUCUMBER TZATZIKI

Ingredients
- 1 bunch radishes, rinsed and trimmed
- 1 cucumber
- 11/2 C plain Greek yogurt
- 2 scallions, sliced
- 2 garlic cloves, minced
- 1 tsp finely grated lemon zest
- 1 TBS lemon juice
- 2 TBS chopped fresh mint leaves
- 2 TBS chopped fresh dill
- 1/4 tsp ground coriander
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Directions

♦ With the grating attachment on a food processor or the coarse side of a box grater, grate the cucumber.

♦ Transfer to a colander inside of a bowl, sprinkle with some salt, and press down gently to extract as much liquid as possible.

♦ Transfer to a clean bowl.

♦ Grate radishes and add to the bowl.

♦ Add yogurt, scallions, garlic, lemon zest, lemon juice, mint, dill, coriander, salt and pepper. Stir gently to combine.

♦ Cover and refrigerate for at least 15 minutes to allow flavors to meld.

♦ Serve garnished with a few radish slices and more chopped fresh herbs on top.
