Black Bean Chicken

Ingredients

  • 3 tsp chili powder
  • 1 tsp cumin
  • 1 tsp pepper
  • 1/4 tsp salt
  • 4 chicken breasts
  • 2 tsp canola oil
  • 1 can black beans, rinsed
  • 1 cup corn
  • 1 cup salsa

Directions

  1. Mix chili powder, cumin, pepper and salt; sprinkle over both sides of chicken. In a nonstick skillet, brown chicken in canola oil over medium heat. Add black beans, corn and salsa; cook, covered, until a thermometer reaches 165, 10 to 15 minutes. Cut chicken into slices.
