Mayan Potato Quesadillas

Ingredients

  • 1 cup mashed potatoes
  • 1/2 cup tomatillo salsa
  • 1/4 cup thinly sliced green onions
  • 2 large flour tortillas
  • 1/2 cup shredded cheddar
  • Butter

Directions

  1. Combine mashed potatoes, salsa and green onions. Top half of the tortillas with potato mixture; sprinkle each with cheddar. Fold tortillas to close. Lightly butter tops and bottoms of quesadillas. Cook in a skillet over medium heat until golden brown and heated through, 2 to 3 minutes on each side. Cut into wedges.
