Ingredients
- 1 cup mashed potatoes
- 1/2 cup tomatillo salsa
- 1/4 cup thinly sliced green onions
- 2 large flour tortillas
- 1/2 cup shredded cheddar
- Butter
Directions

Combine mashed potatoes, salsa and green onions. Top half of the tortillas with potato mixture; sprinkle each with cheddar. Fold tortillas to close. Lightly butter tops and bottoms of quesadillas. Cook in a skillet over medium heat until golden brown and heated through, 2 to 3 minutes on each side. Cut into wedges.
