Flatbread Breakfast Pizzas

Ingredients

  • 3 slices bacon, chopped
  • 2 oz. bulk pork sausage
  • 1/4 cup finely chopped mushrooms
  • 1/2 cup chopped tomato
  • 3 eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 pkg. prepared naan (2 flatbreads)
  • 1/2 cup shredded Monterey Jack or pepper Jack
  • Fresh basil leaves

Directions

  1. Heat a griddle or cast-iron skillet set over a grill to medium heat. Add bacon and sausage to griddle. Cook until cooked through and crisp, about 5 minutes. Add mushrooms; cook, stirring occasionally, until tender and liquid evaporates, about 1 minute. Add tomato; cook and stir until heated through, about 1 minute.

  2. Whisk together eggs, salt and pepper in a bowl.

  3. Pour eggs over meats and veggies on griddle; cook and stir until eggs are set, 1 to 2 minutes. Remove from griddle.

  4. Arrange naan on griddle to heat and crisp on one side, 1 to 2 minutes. Turn naan and sprinkle with cheese. Top with egg mixture. Tent pizzas with foil or cover with grill lid and cook until heated through and bottom is browned, 1 to 2 minutes. Garnish with basil.
