Ingredients
- 1 lb. thin green beans, trimmed
- 3 tbsp olive oil, divided
- 1 1/2 tsp kosher salt, divided
- 1 tsp black pepper, divided
- 4 bone-in pork chops
- 2 cups fresh arugula
- 8 oz. ball fresh mozzarella, torn into bite-size pieces
- 3 plum tomatoes, diced
- 2 tbsp. chopped fresh basil
- 2 tbsp balsamic glaze

Preheat oven to 400. Line a 17×12-inch rimmed baking sheet with parchment paper.

On prepared pan, toss together green beans, 1 tbsp oil, 1/2 tsp salt and 1/4 tsp pepper; spread in a single layer on one side of pan.

Sprinkle 3/4 tsp salt and 1/2 tsp pepper all over pork chops. Place chops on empty side of pan.

Bake for 15 minutes. Increase oven temp to broil. Top pork chops with arugula and cheese. Broil until cheese is melted, about 5 minutes.

In a small bowl, stir together tomatoes, basil, remaining 2 tbsp oil, remaining 1/4 tsp salt and remaining 1/4 tsp pepper. Spoon tomato mixture onto pork; drizzle with balsamic glaze. Serve immediately.
