Perfect Boiled Icing

Ingredients

  • 1 c. granulated sugar
  • 2 egg whites
  • 3 tbsp. water
  • 1/4 tsp. cream of tarter
  • 3 or 4 marshmallows
  • 2-3 tbsp. powered sugar
  • Flavoring
  • Coloring (if desired)

Directions

  1. Place in top of double boiler and start beating until soft peaks are formed.

  2. Add 3-4 marshmallows. Beat again until stiff peaks are formed.

  3. Remove from heat, but while still over hot water, add 2-3 tbsp. powered sugar.

  4. Beat until sugar is mixed into the icing.

  5. Add flavoring and coloring. Spread on cake.
