Ingredients
- 1 1/2 cups diced peeled apple
- 1 tbsp granulated sugar
- 1/2 tsp ground cinnamon
- 2 1/2 cups all-purpose flour
- 1/2 cup finely chopped pecans
- 2 tsp baking powder
- 1 tsp kosher salt
- 1 tsp apple pie spice
- 2 1/2 cups dark brown sugar
- 2/3 cup all-vegetable shortening, melted
- 3 large eggs
- 1 tsp vanilla extract
- Garnish: confectioner's sugar
Directions

Line an 11×8-inch baking pan with parchment paper, letting excess extend over sides of pan.

In a small bowl, stir together apple, granulated sugar and cinnamon.

In a medium bowl, whisk together flour, pecans, baking powder, salt and pie spice. In a large bowl, whisk together brown sugar, melted shortening, eggs and vanilla. Stir flour mixture into brown sugar mixture. Spread half of batter into prepared pan.

Sprinkle apples into batter in pan. Drop remaining batter by teaspoonfuls onto apples and slightly flatten with fingertips.

Bake until a wooden pick inserted in center comes out clean, 25-30 minutes. Let cool completely in pan on a wire rack.

Using excess parchment as handles, remove from pan and cut into bars. Garnish with confectioners’ sugar.
