Ingredients
- 3 medium Kirby cucumbers or 6 small seedless Israeli cucumbers, chopped into small cubes
- 4 plum tomatoes, chopped into small pieces
- 1 cup fresh parsley leaves, chopped
- 1/2 cup fresh mint leaves, chopped
- 1/2 cup olive oil
- 2 tbsp. fresh lemon juice
- Coarse salt and black pepper to taste

Combine all the ingredients in a bowl. Refrigerate for up to 8 hours.
