Prosciutto-Wrapped Melon

Ingredients

  • 1/2 honeydew melon
  • 2 tbsp. fresh lime juice
  • 8 thin slices prosciutto
  • 1 tbsp. olive oil
  • 1/4 tsp flaky sea salt
  • 1 tbsp. small fresh basil leaves, for garnish

Directions

  1. Cut rind from melon half and slice flesh into 16 wedges, each about 1/2 inch thick. Transfer to a large bowl. Add lime juice and toss gently to coat.

  2. Slice prosciutto in half lengthwise to create 16 pieces. Wrap melon wedges with prosciutto. Just before serving, drizzle with oil, sprinkle with salt and garnish with basil leaves.
