Ingredients
- 1 tbsp. olive oil
- 1 cup halved and thinly sliced red onion
- 1 poblano pepper, seeded and chopped
- 10 oz. ground pork
- 1 tbsp. taco seasoning
- 2 tbsp. chicken broth
- 1 tbsp. tomato paste
- 1/4 cup sour cream
- 2 tsp fresh lime juice
- 6 (6-inch) flour or corn tortillas, warmed
- Kiwi Salsa (see recipe)
- Chopped fresh cilantro, for serving

Heat oil in a large skillet over medium-high heat. Add onion and poblano pepper. Cook, stirring occasionally, until softened and lightly charred, about 4 minutes. Add pork and taco seasoning. Cook, breaking meat up with a wooden spoon, until pork is well browned and cooked through, about 5 minutes. Reduce heat to medium low. Add chicken broth and tomato paste. Cook and stir until mixture is evenly coated, about 2 minutes.

Meanwhile, stir together sour cream and lime juice. Spread sour cream mixture onto tortillas. Top with pork mixture and Kiwi Salsa. Serve topped with cilantro.
