Luby’s Style Baked Fish

My Version!
It is wonderful, hubby requests this all the time. Can be served with Rice Pilaf and Lemon-Butter Cream Sauce, but we just eat it with 1/2 baked potatoe each.

Ingredients

  • 2-3 medium fish filets
  • Cajun seasoning
  • salt
  • flour
  • olive oil
  • -
  • 1 1/2 cup Helman's Mayo
  • 2 tablespoons fresh minced parsley
  • squeeze lemon juice
  • 1/2 teaspoon Old Bay Seasoning
  • 1/2 teaspoon Tony's Cajun seasoning
  • 1/2 teaspoon paprika
  • -
  • 1/2 cup crushed up Ritz or Club Crackers
  • 1/4 stick melted butter
  • 1 tablespoon additional minced fresh parsley

Directions

  1. Make the Mayonnaise topping first. Set aside

  2. Crush the crackers up, mix in melted butter and additional minced parsley.

  3. Check filets for fine bones. Season fish with light sprinkle of Cajun seasoning and a little salt. Dredge in flour.

  4. Brown the fish in just a little olive oil. Place filets on a pan.

  5. Spread mayo mixture on the top of the fish about 1/4 inch thick.

  6. Place the filets under the broiler and brown/cook until fish is done and topping is bubbling and slightly browning.

  7. Top fish/Mayo with cracker crumbs

  8. Place back under the broiler until the crackers are just browned.
