Ingredients
- 2 filets Halibut (or cod)
- Old Bay, salt and pepper
- Butter
- 1 shallot
- Garlic
- Sliced mushrooms
- 28 oz can of diced tomatoes
- Oregano, crushed red pepper
- 1 can sliced artichoke hearts
- Leaf spinach
Directions

2 Halibut filets (or cod)

cook in pan with olive oil

season with Old Bay, salt and pepper

Chop 1 shallot, handful of garlic

Saute in olive oil the shallots and then add garlic

Add handful of sliced mushrooms, 28 oz can of diced tomatoes

Add oregano and crushed red pepper, salt and pepper

One can sliced artichoke hearts, drained,
-
handful of spinach and cook
-
Transfer to bowl

To skillet add 2 tbsp of compound butter
-
Add fish, cook 3 minutes on each side
-
Remove to a plate and add vegetable mixture to pan to warm up

Put on plate and top with fish
