Quick Summer Scallop Dish

Ingredients
- 2 cobs bi-color sweet corn
- 1 can black beans
- 2 cloves garlic
- 1 medium zucchini
- 1 medium heirloom tomato
- Chile-Lime Vinagrette (see recipe)
Directions

Cut corn kernels off the cob and tossed with black beans, garlic scapes, zucchini, heirloom tomatoes and chile-lime vinaigrette.

Reserve a bit of that same vinaigrette to brush over fresh sea scallops before searing them in a hot pan and serving them on top of the corn salad.
