Quick Summer Scallop Dish

Ingredients

  • 2 cobs bi-color sweet corn
  • 1 can black beans
  • 2 cloves garlic
  • 1 medium zucchini
  • 1 medium heirloom tomato
  • Chile-Lime Vinagrette (see recipe)

Directions

  1. Cut corn kernels off the cob and tossed with black beans, garlic scapes, zucchini, heirloom tomatoes and chile-lime vinaigrette.

  2. Reserve a bit of that same vinaigrette to brush over fresh sea scallops before searing them in a hot pan and serving them on top of the corn salad.
