Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp sugar
- 1/2 tsp coarse salt
- Pinch of cayenne pepper
- 6 tbsp. cold unsalted butter, cut into small cubes
- 6 oz. sharp white or orange cheddar cheese, shredded
- 1 1/3 cups buttermilk
- 2 tbsp. chopped fresh chives

Preheat the oven to 425 with the racks in the upper and lower third positions. Line two baking sheets with parchment.

Whisk together the flour, baking powder, baking soda, sugar, salt and cayenne in a large bowl. Work in the butter with a pastry cutter or your fingers until the butter is incorporated but some pea-sized lumps remain. Stir in the cheddar, then add the buttermilk and chives, stirring just until the dough comes together.

Using two large spoons, drop 1/4 cupfuls of the dough onto the prepared baking sheets, spaced 2 inches apart. Bake for 12 to 14 minutes, rotating the baking sheets once, until golden brown. Serve warm.
