Ingredients
- 1 cup plus 1 tbsp. unsalted roasted peanuts
- 1 garlic clove, smashed and peeled
- 2 tbsp. finely chopped palm sugar or light brown sugar
- 2 tbsp. fish sauce
- 1 tbsp. soy sauce
- 1 1/2 cups unsweetened coconut milk
- 1 tsp Asian sesame oil
- 1 tbsp. fresh lime juice
- 1/4 cup unsweetened shredded coconut
Directions

Combine 1 cup of the peanuts with the remaining ingredients in a blender and blend until smooth. Transfer to a serving bowl.

Chop the remaining tbsp. of peanuts and sprinkle over the sauce before serving.
