Black bean and corn chili

Prep time: 15 minutes
Cook time: 30 minutes
Serves 6 people
Ingredients
- olive oil
- 1-2 onions, chopped
- garlic
- 2 lb hamburger
- 6 oz tomato paste
- 1/4 tsp cayenne
- 1/4 tsp pepper
- 1 tsp paprika
- 1 tsp salt
- 2 cans black beans
- 2 cans corn
- 32 oz vegetable broth
- 1 can petite diced tomatoes
Directions

In soup pot, heat olive oil over medium high heat.

Add onions and cook until they soften.

Stir in garlic and hamburger.

Cook until hamburger browns, stirring often, about 5 minutes.

Stir in tomato paste and cook for 1 minute.

Add seasoning.

Stir to coat and let cook for 1-2 minutes more.

Add in black beans, corn, tomatoes and vegetable broth.

Bring to a boil, reduce heat, and simmer for 30 minutes.
