Broccoli and Cheese Stuffed Chicken

Ingredients

  • 1 cup Shredded cheddar cheese
  • 1/2 cup Greek Yogurt or crema
  • 1/2 cup Cream cheese
  • 3 cups broccoli minced
  • 3 tsp Minced garlic
  • Applewood seasoning
  • Chicken thighs boneless skinless
  • Red potatoes

Directions

  1. Put potatoes in to bake

  2. Pound thighs out flat and season with applewood

  3. Combine remaining ingredients and flatten into small pan or oven ready crock

  4. In last 10-15 min of potatoes cooking, put cheese mixture into oven

  5. Pan fry chicken and set aside

  6. When potatoes and cheese mixture is soft and hot, stack onto a plate and enjoy together
