Chicken Adobo

Ingredients

  • 4-6 chicken tho by a with skin and bones
  • ▢ 3 garlic cloves , minced
  • ▢ 1/3 cup (85ml) soy sauce
  • ▢ 1/3 cup + 2 tbsp white vinegar
  • ▢ 4 bay leaves (fresh) or 3 dried
  • 2 tblsp brown sugar
  • 2 tblsp black peppercorns
  • Siracha to taste

Directions

  1. Combine all ingredients except siracha and let sit to marinate for a couple hours

  2. Heat oil on the cast iron pan and sear chicken skin side down first

  3. When chicken is brown add in the remainder of the marinade and throw in a bit of siracha

  4. Let simmer on low for an hour until chicken is cooked and sauce is slightly thickened

  5. Serve with rice
