Ingredients
- 4-6 chicken tho by a with skin and bones
- ▢ 3 garlic cloves , minced
- ▢ 1/3 cup (85ml) soy sauce
- ▢ 1/3 cup + 2 tbsp white vinegar
- ▢ 4 bay leaves (fresh) or 3 dried
- 2 tblsp brown sugar
- 2 tblsp black peppercorns
- Siracha to taste
Directions

Combine all ingredients except siracha and let sit to marinate for a couple hours

Heat oil on the cast iron pan and sear chicken skin side down first

When chicken is brown add in the remainder of the marinade and throw in a bit of siracha

Let simmer on low for an hour until chicken is cooked and sauce is slightly thickened

Serve with rice
