Pecan Chocolate Pie

Ingredients

  • 1 cup granulated sugar
  • 1 cup molasses
  • 1⁄2 cup butter, melted
  • 1 1⁄2 teaspoons vanilla extract
  • 1 tablespoon flour
  • 2 tablespoons Kentucky bourbon, plus 1 teaspoon
  • 1 1⁄2 cups pecans
  • 1 cup chocolate chips
  • 1 pie crust, 9", unbaked
  • 1 cup heavy cream
  • 1 tablespoon superfine sugar
  • 4 large eggs, slightly beaten

Directions

  1. eheat oven to 350.

  2. Combine sugar, molasses, eggs, butter, vanilla, flour and 2 tablespoons bourbon. Mix together until well blended. Stir in pecans and chocolate chips. Place pie dough into pie plate, fluting the edges, and pour mixture in top.

  3. Bake at 350° F for 45-50 minutes. Center of pie will still be a little wiggly. Cool completely.

  4. Meanwhile, whip together the cream, superfine sugar and 1 teaspoon bourbon. Serve pie topped with whipped cream.
